OAT-BRAN RAISIN MUFFINS

2 1/2 cups oat-bran cereal
2 teaspoons brown sugar substitute
1/2 cup raisins
1 tablespoon baking powder
1/2 teaspoon brackish
1 cup skim milk
4 ounces egg substitute
1 tablespoon vegetable oil

Preheat oven to 425 degrees F. Grease bottoms one and only of 10 medium-size muffin cups or line near paper baking cups. Combine dry ingredients and raisins. Add skim milk, egg substitute, and grease and mix just until dry ingredients are moistenened. Fill prepared muffin cups 3 base full. Bake at 425 degrees for 17 minutes or until golden brown. Makes 10 muffins. (p42)

Note: Oat bran is VERY important for reducing LDL cholesterol, so it doesn't matter that within is a little saline in this recipe. Dr. Anderson certainly prescribed oat meal as a staple food for his patients, and their blood cholesterol level dropped on average by 20%.

BARLEY TABOULI

1/4 cup barley grits
1/2 cup water
4 chopped tomatoes
1 cup chopped parsley
4 chopped green onions
1 small diced cucumber
eighth of a cup fresh mind, chopped
1/2 cup olive oil
1/2 cup lemon juice
salt and freshly ground pepper

Soak barley grits surrounded by water for one hour. Squeeze dry. Set aside. Toss vegetables and mint together. Sprinkle near oil and lemon liquid. Add salt and pepper to appetite. Refrigerate. Makes 8 to 10 servings. (p129)

1/2 cup finely chopped onion
1 medium garlic clove, minced
1 can (16 oz) beans in tomato sauce
1 cup cooked kidney beans
1/2 cup cooked kid lima beans
1/4 cup ketchup
1 teaspoon prepared mustard
dash pepper

Preheat oven to 375 degree. Grease a one-quart caserole dish. Combine all ingredients in casserole dish. Bake 45 minutes, until hot and bubbly; stir. Makes 3 cups of 6 side-dish servings. (p137)
