Consommé is clear strong stock that has be clarified either using egg whites that are subsequently skimmed off the surface (if made at home), or a terribly fine mesh strainer (if made industrially). consomme is not "concentrated fat"- real consomme have almost no fat within it since all the heavy has be skimmed off.
You can substitute can stock ,which is very glib to find in any grocery store, but the results won't look as correct.
